It is controlled by MatT, the transcriptional activator of the maltose system. It cleaves glucose from the reducing end of maltotriose and longer maltodextrins with a chain length of up to 7 glucose units []. Interestingly, in E. coli, a Trp to Cys exchange at position 292 gains MalZ the ability to transfer dextrinyl moieties to glucose, maltose, and other maltodextrins []. When incubated with 5% maltotriose (G3), MalZ obtains the transglycosylation ability and helps to produce a nigerose-containing oligosaccharide in vitro []. Short Name:  MalZ
